Scented with jasmine blossoms, this green tea from Fuding, in Fujian province, China, has a delicate floral aroma and notes of apple sherbet, lychee and vanilla, making it a refreshing aperitif.
Pairs well with spicy salads, as well as fruity and citrus desserts.
Tom Surgery, Sale & Business Development Director at Ridgeview Wines: "Blossom, flowers, fresh cut pear and a subtle woody pine note alongside a 'classic' green tea aroma. Elegant, slightly chewy tannin, soft mouthfeel and enough acidity to keep it lively and the gentle bubbles lift it all well. I think it would be fun to try with spice and deep fried stuff. Korean chicken wings! Salty, crispy roasted pork belly too."
Once jasmine petals are in season, the tea is scented with fresh jasmine flowers over the course of several days. This is repeated at least 3 times and usually longer, at the discreation of the tea master.
