Mystic Island Winery was founded in 2008 as a boutique winery that integrates humanities, arts, and ecology. The winery is located in a small valley in the core area of the Lotus Grape Wine Region on the Penglai Fairy Island in Yantai, Shandong Province, China. This region is known for its fertile soil and unique climate that is ideal for growing grapes. Penglai originated from the legend of "San Shen Shan" (Three Gods Mountain) on the sea, also known as "Penglai Fairy Island", a mysterious place. The founder of the winery named it "Mystic Island" after this mythical location.
Winemaking:
The grapes are hand-picked and destemmed before being carefully sorted to remove any unwanted berries. The red wine grapes are then gently fed into the fermentation tanks for a cold soak prior to fermentation, allowing the extraction of soft tannins and color. During fermentation, the juice is pumped over the skins and warmed during the later period of fermentation to extract more color and tannin. Post fermentation the wine is drained from the tank and put into a mix of French oak barriques for approximately 11 months. While in oak the wine will complete Malolactic fermentation and will remain on lees to give the wine additional weight and texture before blending.
This wine is made from 65% Cabernet Franc and 35% Merlot grapes from the Mystic Winery vineyard. Showing a ruby red color with a purple edge. The wine displays rich red fruit aromas of raspberry, sour cherry, and roasted red pepper, fused together with hints of grilled bread and smoky oak notes. Fresh opulent fruit on the palate, round and full with a fine tannin structure supporting a concentrated and balanced body, with a long and vibrant finish.

釀造工藝:
葡萄經過嚴格的除梗和手工挑選後,緩慢進入發酵罐;發酵前進行低溫冷浸漬,提高優質單寧和顏色萃取;發酵過程進行皮渣噴淋,發酵後期升溫,增加多酚物質萃取;發酵結束後在全新法國橡木桶中完成蘋果酸乳酸發酵,並繼續陳釀11個月,調配前保留酒泥以增加葡萄酒的酒體和質地。
本品由65%品麗珠和35%梅樂混合釀造而成。 酒液呈明亮的寶石紅色,邊緣紫色調。 豐富的覆盆子、紅櫻桃等紅色水果香氣,伴有些許煙熏和烤麵包等烘烤類香氣。 入口新鮮的果汁感,圓潤飽滿,單寧細緻絲滑,酒體集中均衡,回味持久,有活力。
