Mystic Island Winery was founded in 2008 as a boutique winery that integrates humanities, arts, and ecology. The winery is located in a small valley in the core area of the Lotus Grape Wine Region on the Penglai Fairy Island in Yantai, Shandong Province, China. This region is known for its fertile soil and unique climate that is ideal for growing grapes. Penglai originated from the legend of "San Shen Shan" (Three Gods Mountain) on the sea, also known as "Penglai Fairy Island", a mysterious place. The founder of the winery named it "Mystic Island" after this mythical location.
Winemaking: Carefully hand selected fruit from the Cabernet Franc Vines situated on the eastern side of Mystic Vineyard. The grapes were gently de-stemmed, and hand sorted before being delicately delivered to the small tanks on the lower level of the winery. The must was then cold soaked to extract colour and flavour compounds from the skins. Following the cold soak, the must was warmed to allow fermentation, and the juice was pumped over the skins to extract more colour and tannin. Malolactic fermentation was completed, and the wine was matured on lees for 18 months before bottling.
Tasting note: This wine was made from 100% Cabernet Franc grapes from the Mystic Winery Vineyard. Bright ruby red colour with aromas of sour cherry, blueberry, and lavender, combining with subtle pantry spice notes and a hint of toasty oak. The palate is elegant and complex with fine structured tannins and balanced acidity which leads to a long and pleasant finish.

仙島酒莊創建於2008年是一家將人文、藝術、生態融為一體的精品酒莊。酒莊坐落在山東省煙台蓬萊仙島葡萄酒產區的核心小產區一丘山山谷。這裡以肥沃的土壤和獨特的氣候聞名,非常適合種植葡萄。蓬萊起源於海上 “三神山” 的傅說,又被稱為“蓬萊仙島”,是一個有著神秘色彩的地方,創始人便以“Mystic Island-仙烏酒莊,為酒莊命名。
釀造工藝:
選自仙島酒莊東側地塊的品麗珠葡萄,葡萄經過柔性除梗和嚴格手工挑選,借助᯿力經蠕動泵緩慢進入到低層車間的小型發酵罐。發酵前進行低溫冷浸漬,萃取顏色及單䌀;冷浸漬結束葡萄汁升溫發酵,發酵過程進行皮渣噴淋,增加多酚物質萃取。進行蘋果酸乳酸發酵,搭配酒泥熟成18個月裝瓶。
本品使用仙島酒莊100%的品麗珠葡萄釀造而成。明亮的寶石紅色,帶有紅色櫻桃、藍莓的漿果香和薰衣草的花香,伴隨著淡淡的佐料香和少許橡木烘焙香。口感優雅複雜,單䌀結構良好,酸度平衡,餘韻持久愉悅,伴隨著果香和複雜的香料香。
