Winemaking Process: This Aÿ Blanc Grand Cru is based on a 20-year-old Solera which gives it its slightly oxidative side, think Madeira. Sweet only survives by the grace of sufficient acids and that is also the case here. What a fantastic discovery!

Tasting Note: The wine from the Champagne region. 100% sourced from Grand Cru vineyards. The nose is packed with orchard fruit, lemon, peach and white flower. A medium to full-bodied wine that will continue to evolve in the cellar. Incredibly complex and precise, the crisp acidity is cloaked in an attractive core of fruit.
