It was by the royal ordinance of Louis Philippe in 1847 that the term Chambertin became associated with Gevrey to officially become Gevrey-Chambertin. The most famous premier crus of Gevrey-Chambertin line the "Côte Saint-Jacques", which is how this slope was known in the 19th century.

The vines of this plot thrive on rock with a very red clay soil and fossiliferous rocks.Ideally exposed on the south slope of the Combe Lavaut, the vines of Lavaut-Saint-Jacques see the rocks of the middle Jurassic emerge, warmed by the midday sun. The supremacy of the wine of Gevrey-Chambertin also comes from the cool currents, descended from the combe in the wake of the glacial waters.

At each stage, all our work is rhythmed by the synodic revolution of the moon... And our vines are conducted in strict compliance with the principles of organic agriculture.
The elaboration of the wines goes through an aging between earth and wood.

這塊葡萄園的葡萄藤生長在紅色黏土土壤和含化石的岩石上。坐落於洛瓦特溝（Combe Lavaut）的南坡，洛瓦特-聖雅克葡萄園的葡萄藤可以感受到中侏羅紀岩石在正午陽光下的溫暖。吉夫雷-香貝丹葡萄酒的卓越品質也得益於冷流，從冰川水的溪流中帶來。
