Snake Dragon Pearl is a unique grape variety in China, aiming to showcase the unique flavor of China to the world. Its silky and delicate Eastern style has been described by the owner of West Pigeon Winery as a "great variety that has the potential to lead Chinese wine towards the world." Vintage: 2019 Alcohol content: 14.0%vol Oak barrel aging: 12 months Production process: After the grapes are fully ripe, they are manually harvested and selected, and then mechanically sorted. After destemming and crushing, the juice is fermented in tanks for about a month. After alcoholic fermentation is completed, it undergoes one to two months of malolactic fermentation. After fermentation, it is aged in 50% new/50% one-year-old French oak barrels for 12 months. Tasting notes: The mysterious and charming Snake Dragon Pearl exhibits a unique aroma, silky and delicate Eastern style. It offers rich variations, with ripe and full-bodied red berry flavors accompanied by notes of rose, pine resin, dried apricot, and intense strawberry aroma. It has a round and full-bodied mouthfeel, with smooth and refined tannins, a complex structure with layers of flavors, and a lingering finish.
