00 Wines Seven Springs Chardonnay is an exquisite organic wine hailing from the prestigious south block of Seven Springs Vineyard. With breathtaking views of Mt. Hood, this Chardonnay flourishes at high elevations in the Eola-Amity Hills, cultivated in rich Jory volcanic soils. Utilizing the innovative "Black Chardonnay Method," the grapes are gently foot-crushed and undergo overnight skin contact, followed by a meticulous long press for optimal phenolic extraction. With no sulfites added, the juice ages for 12 months on the lees in barrel and finishes for 6 months in stainless steel, resulting in a vibrant, complex wine that delights the palate.
2022 was an unusual but ultimately successful vintage. Despite a unique April frost event, the growing season was exceptionally favorable due to later ripening with a late October pick date which resulted in fresh natural acidity and delicious fruit flavors.

"Delicate and floral in the glass, the 2022 Chardonnay Seven Springs blossoms with a bouqet of chamomile, mint and yellow apples as a hint of smoky reduction adds lovely contrast. Supple and round but also quite savory, this washes across the palate with a salty mix of white pit fruits and lime as exotic inner spice tones arc across the palate. It finishes like liquid potpoutti, saline and long, leaving a crunchy sensation and a citrus tinge that linger so long. The 2022 is a spice box with many years of evolution ahead of it."
