大峰 (Daimei) is a standard sake that is brewed year-round to ensure freshness. It is the flagship product of Daimei Shuzo and is made using Yamadanishiki rice polished down to 35%, aiming for a balance of sweetness, freshness, and acidity. It received the first prize in the Junmai Daiginjo category at the "SAKE COMPETITION 2023," the largest domestic sake evaluation event, and also won a gold award at the IWC2021, the world's largest sake competition, and a silver award at IWC2023.
Tasting Notes: This sake emits a sweet and refreshing aroma with fruity notes reminiscent of pear and white peach. On the palate, you can experience juicy sweetness and mineral qualities of sugarcane and roasted almonds. The finish lingers with a hint of bitterness, evoking flavors of cocoa beans and orange peel.
