Founded in 2008, Mystic Island Winery is a boutique winery that integrates culture, art, and ecology. The winery is located in the core area of the Lotus Grape Wine Region on a hillside valley in Xian Island, Penglai, Yantai, Shandong Province. This area is known for its fertile soil and unique climate, which are ideal for growing grapes. Penglai, originating from the legend of "San Shen Mountain" on the sea, is also known as the "Mystic Island." The winery was named Mystic Island Winery in honor of this mystical place.
This wine is 100% Chardonnay from the Mystic Winery vineyard and is fermented with wild yeast. Bright lemon yellow in colour, with fresh citrus, ripe stone fruit and minerality character, seasoned with spicey oak notes. The palate is full bodied, elegant, and focused, with a citrus thread and creamy texture supporting the fruit and minerality to a long flinty finish.
Winemaking:
These grapes were carefully selected at full maturity from a total of 14 small plots on the Mystic Winery Vineyard. The whole bunches were sorted before being gravity fed into the small membrane press where they were gently squeezed. After minimal settling, the juice was racked into French oak barrels and left alone to ferment naturally with wild yeast. Following a cool and slow fermentation, complete malolactic fermentation was performed. The use of a variety of different types of oak barrels increased the complexity of the aroma and taste of the wine.

"Very subtly creamy and completely chiselled on the nose with fine lees, wet stones and fresh lemon zest. Refined and textured on the palate with a medium body, lovely elegance and mineral fineness. 這款葡萄酒是來自Mystic Winery葡萄園的100%霞多麗(Chardonnay),使用天然原生酵母發酵。色澤明亮的檸檬黃色,帶有新鮮的柑橘、成熟的石果和礦物質的特點,並伴隨著辛辣橡木的香氣。口感飽滿、優雅且集中,擁有柑橘的層次感和奶油般的質地,支撐著水果和礦物質,最後以長久的燧石般的收結。
釀造工蓺
這些葡萄是從Mystic Winery葡萄園的14個小區域中在完全成熟時精心挑選的。整串葡萄在進入小型薄膜壓榨機之前經過篩選,然後以重力方式進行輕柔擠壓。經過最少的澄清後,葡萄汁被轉移到法國橡木桶中,並自然發酵使用野生酵母。在涼爽而緩慢的發酵過程中,進行了完全的蘋果酸-乳酸雙重發酵。使用不同類型的橡木桶增加了葡萄酒的香氣和口感的複雜性。
