Founded in 1997 by Phil Sexton, Giant Steps is a prestigious winery nestled in the scenic Yarra Valley, Australia. With a focus on cool-climate wines, the winery carefully selects prime vineyard sites that showcase the region's diverse soils and microclimates. The grapes for this wine are carefully hand-picked from the Tarraford Vineyard, which is known for its exceptional terroir and cool climate. The fruit is then gently whole bunch pressed to extract the purest juice, which is then transferred to French oak barrels for fermentation.
During the fermentation process, the wine undergoes a natural yeast fermentation, allowing the true character of the vineyard to shine through. The use of French oak barrels, of which a portion is new, adds complexity and depth to the wine, while still allowing the fruit to be the star of the show. After fermentation, the wine is aged on lees, stirring occasionally to enhance the texture and add richness. This careful aging process contributes to the wine's beautiful balance and complexity.
