Kobayashi Shuzo was founded in 1872, during the fifth year of the Meiji period, and has been a representative sake of the prefecture, improving year by year. Over a decade ago, this small-scale brewery had considered shutting down, but with the enthusiastic efforts of the dedicated manager, Mr. Kobayashi, and the hard work of his beautiful wife, who was a lecturer at the brewery's research and development center, and the guidance of Tohdashuzo, a master brewer from the Seta Ryuzan family, the entire brewery worked together to produce a full quantity of top-quality ginjo sake.
With women as the main consumer group, "Hououbiden" sales have been increasing steadily in recent years, becoming one of the popular brand names. However, due to limited equipment and production capacity, the quantity available is also limited. If demand continues to outpace supply, the Otokoyama sake will become increasingly rare and difficult to obtain in the near future.
Hououbiden Junmai Ginjo Black Phoenix is a premium Japanese, which is polished to a ratio of 55%, removing the outer layers and retaining only the most flavorful part of the rice. The sake is brewed using traditional methods and the brewery's own yeast, resulting in a refined and complex flavor profile with a rich aroma and a smooth finish.
On the palate, this sake has a balanced taste with a subtle sweetness and a delicate acidity that complements its rich aroma, which features notes of ripe fruits and flowers. Using local premium sake rice called "Aiyama", this sake has a gorgeous fruity aroma of melons, peaches, cherries, and strawberries, and a delicate and elegant sweetness on the palate. It pairs well with a variety of Japanese cuisine, including grilled meat, tempura, and aged cheese.

以女性作為主要的消費層,「鳳風美田」近年銷量節節上升,成為人氣銘柄之一。但由於設備有限,生產量亦備受限制,如果維持著這樣的生產數和強勁的需求量,不久的將來,鳳凰美田都會愈來愈珍貴,一滴難求。
鳳凰尾純米吟釀黑鳳凰是一款優質的日本清酒,經過55%的磨飛,去除外層,留下米的最精華的部分。清酒使用傳統的釀酒方法和釀酒廠自有的酵母,口感精緻複雜,帶有濃郁的香氣和柔順的餘韻。
這款清酒口感平衡,帶有微妙的甜味和柔和的酸度,與其濃郁的香氣相互輝映,呈現出成熟水果和花朵的風味。使用當地夢幻酒米 「愛山」釀造,華麗的瓜果香、蜜桃、櫻桃、草莓和細緻優雅甜美的口感。它與各種日式料理搭配都很適合,包括燒烤肉類、天婦羅和陳年乳酪。
