Mystic Island Winery was founded in 2008 as a boutique winery that integrates humanities, arts, and ecology. The winery is located in a small valley in the core area of the Lotus Grape Wine Region on the Penglai Fairy Island in Yantai, Shandong Province, China. This region is known for its fertile soil and unique climate that is ideal for growing grapes. Penglai originated from the legend of "San Shen Shan" (Three Gods Mountain) on the sea, also known as "Penglai Fairy Island", a mysterious place. The founder of the winery named it "Mystic Island" after this mythical location.
Winemaking: The Merlot is planted on the eastern and northern slopes of the Mystic Winery vineyard, and only the best quality fruit is selected for the Reserve range. The fruit was de-stemmed and carefully sorted before the berries were gently fed into the top of the fermentation tanks on the lower level of the winery. The must was then cold soaked to extract colour, tannin and flavour compounds from the skins. During fermentation, the juice was pumped over the skins to extract more colour and tannin. Post fermentation, the wine was drained from the tank and put into a mix of French oak barrels to complete malolactic fermentation and mature on yeast lees before being blended and bottled.
Tasting note: This wine is made with 100% Merlot grapes from the Mystic Winery vineyard. Bright ruby red with intense red and black fruit notes of cherry, plum and blackberry, combined with complex aromas of chocolate, tobacco, and spicey oak notes. On the palate, the wine is medium to full bodied, fleshy, with fine grained tannins and fresh acidity offering support to the elegant structure and length. Excellent drinking now but careful cellaring will lead to increased suppleness and complexity.

釀造工藝:梅樂種植在仙島酒莊的東坡和北坡,只選擇品質最佳的果實做珍藏系列。 葡萄經過柔性除梗和嚴格手工挑選,緩慢進入到下一層車間的小型發酵罐。 發酵前進行低溫冷浸漬,選取顏色和單寧,保留新鮮果香; 發酵過程進行皮渣噴淋,新增多酚物質萃取。 發酵結束後在法國橡木桶中完成蘋果酸乳酸發酵,裝瓶前帶酒泥熟成。
品鑑筆記:本品使用仙島酒莊100%的梅樂葡萄釀造而成。 明亮的寶石紅色,帶有濃郁的櫻桃、李子、黑莓等紅色果香和黑色果香,混合著複雜的巧克力、烟草、辛料橡木香。 中等至飽滿酒體,單寧豐富有紋理感,口感複雜持久。 適合現在飲用且適當陳年後可新增該款酒的柔順性和複雜度。
