Tasting Note :
Rich dark red in color with crimson hue. On the nose, it has upfront notes of dark blackcurrant, vanilla spices, ripe capsicum & lifted darker component of the fruits. Some violet & blue fruits too. On the palate, it has a broad spectrum texture. Redefine plums note & chocolate sweetness and carry good amount of freshness. Textural tannins, acids & fruit sweetness. Persistent & lengthy finish.

“A very refined, racy nose underscored by the pure, bountiful red and blue fruit. Cassis, red strawberries, hawthorn fruit, blueberries, black tea and hints of pencil shaving, spice box and lavender. Really fresh and fluid on the medium-bodied palate that highlights class, elegance and details over power and richness. Silky tannins will meld into the lengthy, polished finish. “Grace Vineyard’s 2019 Chairman's Reserve is a blend of 73% Cabernet Sauvignon, 14% Merlot and 13% Cabernet Franc. It has a very deep ruby appearance and a fragrant nose of lifted cassis, black cherry, black plum and a touch of leafy bramble fruit complemented by some subtle savory new oak notes of clove, toast and smoke: the 2019 saw a smaller percentage of new oak than the 2018 vintage (45% in small new French barrique with the remainder aged in one-year-old [25%] and old oak [30%] for some 16 months). On the palate, this is full-bodied, with some livelier acid than the 2018 vintage—a pH of 3.34 in 2019 and higher total acidity than the 2018 as well—propped up by coating, fine-grained tannins and well-integrated 14.5% alcohol. This provides the structure for the ripe core of dark fruit and savory new oak. For such a young wine, this is already approachable and is more vinous and vibrant than the 2018 Chairman's Reserve when first released. With long length, quality is similar to the 2018 vintage, but it will be fascinating to see how the 2018 and 2019 evolve in bottle over time. Length/Type of Fermentation : The fruits is de-stem and lightly crush into a small open top fermentation tank & barrels. The wines fermented at fairly high temperature with routine manual cap plunging.
Length/Type of Aging : The wine spend approximately 2 months in seasoned barrel for MLF, follow by further 16 months aging in 45%new French Oak & 25% 1 years old barrel + 30% 2 years old barrel. The wine are treated minimum prior to bottling to maintain it’s full flavour potential.

怡園酒莊主席珍藏呈現濃郁的深紅色,帶有深紅色調。鼻息中散發著黑醋栗、香草香料、成熟紅椒和藍莓等深色水果的濃郁芳香。口感宽厚,質地豐富,呈現熟李子、巧克力甜味和爽口酸度。酒體結構良好,單寧綿密持久,尾韵悠長而充滿香味。
