Billecart-Salmon was established in 1818 by Nicolas Francois Billecart and his wife Elisabeth Salmon and has been passed down to the seventeenth generation. It is one of the few renowned Champagne brands still family-owned. With limited production, Billecart-Salmon is often considered a hidden gem, appreciated mainly by connoisseurs. The Champagne is known for its delicate freshness and fine bubbles, achieved through the family’s commitment to extended fermentation using their cultivated wild yeasts. This Brut Blanc de Blanc Grand Cru, a blend of two vintages, showcases the elegance of Chardonnay with its delicate effervescence and luminous yellow-gold hue. On the nose, it reveals pure mineral notes of brioche, fresh butter, and citrus. The palate offers a creamy, chalky texture with hints of fresh almonds and citron zest, finishing with remarkable smoothness. Its exceptional fermentation complements dishes like Ossetra caviar or fine marinated sashimi beautifully.
